Quick n' Easy?

 
Quick n' easy.. and it's my daughter's favourite..





SPICED FISH with cucumber yogurt Sauce

Adapted from Women's Weekly

4 cuts fish fillets
2 tsp ground cumin
2 tsp ground corriander
2 tsp finely grated lemon rind
2 cloves garlic crushed
2 tsp olive oil

Cucumber yogurt sauce:
260g cucumbers seeded and chopped finely
1 1/2 cups fresh yogurt
1 1/2 tbsp lemon juice

Combine fish in large bowl with remaining ingredients. Cook fish in heated large oiled non-stick pan, in batches until browned both sides and cooked through. Serve fish with cucumber yogurt sauce and pieces of lime, if desired.

Cucumber Yogurt Sauce : Combine ingredients in a small bowl.







COLESLAW

shredded cabbages
shredded carrots
equal amount of mayonnaise & fresh cream
salt and pepper
lemon juice (optional)

Rinse all vegetables in cold water and drain well.
Whisk all ingredients and toss in the vegetables. Serve at room temperature or chilled.






POTATO CROQUETTES

4 large potatoes cooked in skins
30g butter
1 egg yolk
1 egg
1/4 tsp ground nutmeg
1/2 tsp tarragon
3 beaten eggs
125g breadcrumbs
salt and pepper
oil for frying

Peel and cube potatoes. Mash thoroughly or grate finely. Add butter to potatoes and season well. Mix to incorporate. Add egg yolk and 1 whole egg; mix well with wooden spoon. Add nutmeg and tarragon, mix again.
Spread potato mixture flat on a dinner plate. Cover with a cling film and chill for a few hours. Preheat oil. Shape potato mixture into croquettes (cylindrical-shaped rolls). Dip in beaten eggs to coat completely and roll in breadcrumbs. Deep-dry for 3-4 minutes.

Sabrina ~ Lisya suka coleslaw yang taruk cream. Tapi ader orang buat pun tak letak cream. Sab boleh cari di supermarket..bahagian sejuk.. Fresh Light Cream.. boleh juga guna double cream.
Rozzan ~ Ikan tu tak pedas langsung. Just use white fish Rozzan.. pun boleh.. Yang sedap mestilah cod atau halibut.. tapi kiter juga suka guna cream sutchi fillet.. sedap. My daughter kata tasty sutchi ni. Cuma Dory sahja kiter tak berapa suka.. Salmon tak sedap kalau letak rempah kiter.. I mean rempah ratus kiter lah..
Mamahouse ~ Mama guna sebarang white fish fillet pun sedap.. Tapi kalau mama buat untuk kids kat rumah tu, kurangkan lemon kat yogurt sauce tu.. jadi tak masam sangat.. Instead of yogurt, mama pun boleh ganti dengan fresh light cream..

Mas ~Alhamdulillah, kak rossya sihat sahja. You can get double cream dari Cold Storage. It's other name is actually heavy whipping cream.. bermakna double cream tu kalau diwhipped up will hold its shape better compared to using normal whipping cream. Tapi kadang2 double cream tu susah nak dapat.. sebab selalu jugak tak der stock. Brand-wise kak rossya tak particular.. sebab they ended up to be same anyway. For coleslaw .. try to use light cream.. kalau takder boleh guna pure cream atau fresh cream... kalau takder jugak terpaksalah guna double cream...Rasanya lebih kurang sama.. cuma double cream has higher butterfat content, making it 'richer' than light cream.. Heehee.. talk about nak jaga badan kan.. Tarragon is a kind of herbs.. Remember to use fresh herbs for basting or marinating grilled stuffs or patties. Use dried herbs for stews atau lauk2 yang berkuah pekat tu.. They actually produce a different outcome. Kak Rossya beli my fresh herbs ~ tarragon, thyme , oregano.. kat ColdStorage cold section.. bahagian sayuran segar dan salad segar tu. Last but not least.. at the moment.. I'm using Heinz Worchestershire sauce.. sebab it's the smallest bottle available.Worchestershire sauce is actually a marinating sauce that made up of anchovies(ikan bilis), molasses (air gula hangus) and soya sauce as their main ingredients. Semua supermaket ader jual.. bahagian seasoning. I hope this helps.. sorry.. did I get carried away here? Panjangnyer....kak rossya ngoceh ni...
