blackberry & apple cake...
an apple a day keeps the doc away...
and how about tomatoes??
~~ Anyone can count the seeds in an apple, but only God can count the number of apples in a seed.

Blackberry & Apple Cake

1 tbsp butter for greasing
350g cooking apples
3 tbsp lemon juice
300g wholemeal flour
1 tsp baking powder
1tsp ground cinnamon
175g prepared blackberries, plus extra
to decorate
175g light muscovado sugar
1 egg, beaten
200ml low fat fresh milk
55g white or brown sugar cubes,
crushed lightly

Grease 900g loaf tin with butter and line with baking paper. Core and peel and finely dice the apples. Place them in a saucepan with the lemon juice, bring to the boil. Cover and simmer for 10 minutes, until soft. Beat into a puree, then leave to cool.
Sift the flour, baking powder and cinnamon into a bowl, adding any bran that remains in the sieve. Stir in 115g of the blackberries and the sugar. Make a well in the centre of the ingredients and add the egg, milk and cooled apple puree. Mix until thoroughly blended. Spoon mixture into the prepared loaf tin and level top with a palette knife.
Sprinkle with the remaining blackberries, pressing them down into the cake mixture and top with the crushed sugar cubes. Bake in a preheated oven for 40-45 minutes. Leave to cool in the tin.
