Goodbye to 2006!! Welcome 2007

 
Salaams, oh.. how I missed the fotopages.. How are my friends out there? Here's wishing everyone again a wonderful year ahead.. and a prosperous one. InsyaAllah.

Long gone are the holidays!! Schools has long re-opened.. daily routine has taken it's place. My internet has been kinda slow lately. I've done the re-formatting though. So will update slowly ..







NAGASARI (Banana-stuffed Steamed cake)

250g rice flour
850ml coconut milk (from 1 1/2 coconuts)
2 pandan leaves tied to a knot
1/2 tsp salt
175g granulated sugar
2 tablespoons sago flour (optional)
8-9 pisang raja or kepuk, sliced
young banana leaves for wrapping

Dilute rice flour with part of the coconut milk and set aside. Boil remaining coconut milk with pandan leaves and salt. Add rice flour liquid and sugar, stirring until the sugar has dissolved. Remove from fire, sprinkle with sago flour and mix well. (kalau takder tepung sago, takyah lah taruh. Orang tua dulu2 pun tak taruh. Cuma kalau bubuh sedikit, ia jadi lebih lembut)

Place 1 tablespoon of dough on 1 piece of banana leaf. Add 1 banana slice and top with the dough again. Roll banana leaf and fold both sides towards the centre. Steam fro about 30minutes until done.

Note: Pisang tanduk can also be used for Nagasari.

Noor's SOTONG MASAK REMPAH


1kg cuttlefish cleaned
30g meat curry powder
30g korma spice powder
30g fish curry powder
100g onions ground
10g garlic ground
4cm ginger ground
250ml thick coconut milk

(B)
5 nos shallots
3 cloves garlic
2cm ginger
3 sprigs curry leaves

Boil cuttlefish and strain. (I skipped this part and add the cuttlefish directly and cooked with the gravy).
Heat oil and saute ingredients (B). Add all dry spices and a little bit of water, stir till well blended.
Then, add coconut milk and simmer till liquid thickens. Lastly, add in cuttlefish and season to taste.






It was a last minute decision to make these mini fairy cakes for a nephew birthday. It was fun though, but I guess.. I still need practising on the piping techniques.. Hai.. nak berguru lah ngan Kak yong ker, Shida ker.. Nina ker... Boleh ajo saya tak, cikgu?



FAIRY CAKES

125g soft margarine or butter
125g caster sugar
125 self-raising flour
2 eggs




Variations:

Vanilla ~ 1 teaspoon vanilla essence or extract
Lemon ~ grated rind of 1/2 lemon
Orange ~ grated rind of 1/2 small orange
Chocolate ~ replace 2 tablespoons of flour with same weight of cocoa powder



Line 12 section bun tray with paper cake cases. Put all the ingredients into a bowl, with your chosen flavouring, if using, and beat together until smooth. Divide the cake mixture evenly between the paper cake cases using a dessertspoons and level the surface. ( I used just ice-cream scoop)
Bake in a preheated oven 180C for 15 minutes until springy to the rouch. Leave for 5 minutes in teh tray , then remove cakes to a wire rack and leave to cool completely.









ROYAL ICING
Makes 220g (7oz)

30g egg white (at room temperature)
185g confectioner's sugar (icing sugar)
2 teaspoon lemon juice

Place egg white in a bowl with three-quarters of the icing sugar. Beat on slow speed for 2 minutes, using an electric mixer. Adjust consistency by adding the remaining icing sugar and lemon juice and continue to beat on slow speed until the icing is of full peak consistency.
Cover the icing with a polythene bag or a damp cloth to prevent the surface from drying and forming a crust.




Note : Egg whites are measured by weight rather than by number. this method gives accurate results, particularly when making royal icing. Soft peak royal icing will take a slightly longer time to dry than full peak ones.

Dd ~ Kenapa tak smooth pulak.. Kak rossya actually ikut tuanpunya resepi cam tu. Selalunya kalau buat biskut atau kek.. Dd cuba gunakan gula jenis caster sebab ia halus.. sekalipun resepi cuma indicate 'gula'. Takpe.. nanti cuba lagi yer.. Kalau2 kuih melayu dan masakan.. Dd boleh guna granulated sugar ajer..
