It's been drizzling...

Yes... the weather is wet lately... it'll take days to dry one load laundry.. And the dryer has been working overtime.. But my daughter.. still indulge in cups after cups of ice-cream.. The only setback was, I for one would rather stay indoor during rainy days.. So gone are the few days of school holidays.. Besides, 'kelas mengaji' and holiday classes for Lisya, the rest of the times we just spend indoor with board games and TV.. nearly jadi Bored games pulak.. And Lisya was asking, " Ma, kata nak pegi zoo?" Hahaha.. bila tu?

Adapted from After-Work Cookbook

2 teaspoon olive oil
1 small brown onion, chopped finely
2 cloves garlic, crushed
1(70g) small carrot, chopped finely
1 (75g) trimmed celery stick chopped finely
400g minced beef
2 cups (500ml) tomato pasta sauce
125ml beef stock
375g fettucine

Heat oil in large frying pan; cook onion and garlic, stirring, until onion softens. Add carrot and celery, stirring until vegetables are just tender. Add beef, cook stirring, until changed in colour. Add sauce and stock, bring to a boil. Reduce heat; simmer, uncovered about 15 minutes or until mixture thickens slightly.
Meanwhile, cook pasta in large saucepan of boiling water with a teaspoon on olive oil. Cook until just tender. Serve fettuccine topped with bolognese sauce.


200g milk chocolate
200g plain chocolate
200g unsalted butter
3 eggs
175g light muscovado sugar
75g flour
2 teaspoon baking powder
200g walnut pieces

Grease and line 11 x 8" shallow baking tin with baking parchment. Chop the milk chocolate into small chunks. Melt the plain chocolate with the butter in a small bowl over hot water.
Beat together the eggs and sugar until turning foamy. Stir in melted chocolate mixture. Sift the flour and baking powder into the bowl. Add the chopped chocolate and walnut pieces and fold the ingredients together gently. Pour the mixture into the baking tin.
Bake in a preheated oven at 180C...(depending on your oven type) for 30minutes until a sugary crust has formed on the surface but the mixture gives slightly underneath ( it will firm up slightly as it cools, so avoid the temptation to cook any longer) leave to cool in the tin.
Cut into squares and store in an airtight container in a cool place for up to 6 days.
To serve ~ top with your favourite topping. I just topped with melted chocolate. Then quickly drizzle with a little white chocolate and a run the top to form marbled effects..

1 cup sugar
6 tablespoon unsalted butter
1/2 cup heavy whipping cream

Heat sugar on a medium heat in a heavy bottom saucepan. Do not stir.
As soon as all the sugar crystals have melted (the liquid sugar should be dark amber in colour), immediately remove the sauce from heat and quickly stir in butter. Continue to whisk vigorously until butter has melted.

The add cream to the pan and continue to whisk to incorporate. Note that when you add the butter and the cream , the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts big.

Whisk until the caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a jar and let sit to cool to room temperature. Store in the refrigerator for up to 2 weeks.

Warm caramel sauce before serving.

Important Note from Elise ~ First before you begin, make sure you have everything ready to go - the cream and the butter next to the pan. Ready to put in. Making caramel is a fast process that cannot wait for hunting around for ingredients. If you don't work fast, the sugar will burn.
