The kids in us..

 



Hmmm... I'll bet.. today.. I'll have lots of angry mothers. But I just love..... fast-food. Give me fried chicken and burgers anytime... Ader geng tak? I know one person.. I can really sit side by side with.. Sabrina.. right?
I remember when I was pregnant, I had to have a burger everyday.. Just have to have it.. I guess.. it's called craving during pregnancy.. But hubby said... ' itu bukan craving.. tapi nafsu makan yang tak mau dikawal..' Wakakaka... ia ker? In fact dulu, my friends gave me a nickname..' the MacDonald's kid". Boleh gitu? Dah tua2 pun bagi orang nickname cam tu... But honestly, now I really have a soft heart for Burger King.. OOps! Enough for the advertising.. lets make our own fast-food. But make a healthy one... use leaner meat and less fat.. right?





PARMESAN-CRUSTED FISH BURGER with mixed herbs mayo

1 egg
75g breadcrumbs
2 tablespoons finely chopped basil (optional)
25g parmesan cheese, freshly grated
4 tablespoons plain flour
4 cuts fillet (any white fish)
2 tablespoon of olive oil
salt and black pepper

Mixed Herbs mayo:
Mix a small bowl of mayonnaise with chopped mixed herbs of your choice. I used tarragon and parsley.

Beat the egg with a little salt and black pepper. Mix together breadcrumbs with basil (if use) and grated parmesan in a bowl , then turn out on to a plate. Spread plain flour on a separate plate.
Coat the fillets in the flour and dip them first in the egg mixture then coat evenly in the breadcrumb mixture. Coat in egg mixture again and then the breadcrumbs mixture for the second time for a crunchier crust.
Heat the oil in a shallow pan and fry the fish until golden and cooked through, for about 4minutes on each side. halve the rolls and toast under a grill then fill with the salad leaves, tomato slices and crusted fillets. Serve with mixed herbs mayo, lemon wedges and extra salad.





CRUSTY ROLLS

750G strong white flour, plus extra for dusting (I used bread flour)
7g dried yeast (or one sachet)
1 teaspoon salt
a pinch of sugar
450ml lukewarm water

Topping:
1 egg beaten
sesame seeds
black sesame seeds
or rolled oats
(You can also top with caraway seeds, sunflower seeds or poppy seeds)

Sieve the flour into a large bowl and add the yeast , salt and sugar. Make a well in the centre and add most of the water, keeping back about 50ml. Mix thoroughly, adding the remaining water if necessary, until you have a firm , soft dough.
Knead the dough on a lightly floured surface for about 10minutes, stretching and folding until it is smooth and elastic. Put the dough back in the bowl and cover with a clean, damp cloth. Put in a warm place and leave to rise until doubled in size , about 50minutes.
Turn out the dough and knock it back by kneading it for another 1-2 minutes. Divide the dough into 10 pieces and roll into round balls. Place the rolls on light floured trays allowing enough space for them to double in size. Light brush each roll with beaten egg and sprinkle half the rolls with your favourite topping. Cover and leave to prove until doubled in size about 10minutes. Put the trays of bread in a preheated oven 200C. Place a tray of hot water on the lower rack of the oven to create a little steam. Close the door immediately and cook the rolls for 25minutes or until golden and cooked through. If they are browning too fast, cover them lightly with foil. When the wolls are cooked, remove them from the oven and cool on a wire rack. Store in an airtight container till ready to use.

Note : Creating a little steam in the oven while cooking the bread rolls will give the finished roll a crispier finish.





CheeseBurgers

600g lean minced beef
45g cooked chopped onion
1 egg
1 tbsp freshly chopped parsley
few drops of Worchestershire sauce
salt
ground black pepper

Place beef, cooked chopped onions, egg , parsley and worchestershire sauce a large bowl. Mix thourougly. Add salt and pepper.. season well. Shape meat into patties. Make thicker for a juicier burger.
heat oil in a large frying pan over medium heat. Add patties and cook 8-10 minutes depending on thickness, turning over 2 to 3 times to avoid charring. When cooked, remove from pan, set aside and keep hot.
To assemble, halve and toast rolls under a grill and top each base with salad leaves and tomato slices followed by a burger and cheese slice and the lid. You may even serve wIth a selectioN of pickles and mustard mayonnaise.


Note : You can also make a simpler beef patties by just mixing minced meat with salt and black pepper, chopped onions if you like .





MASHED POTATO

1 kg kentang
1/4 cawan susu segar
2 sudu besar mentega
1/4 sudu kecil serbuk lada hitam
garam secukup rasa

Kentang dikupas dan dipotong 4 kemudian direbus didalam air mendidih bersama garam sehingga empuk. Setelah empuk , toskan kemudian lenyekkan didalam periuk tadi ketika kentang masih panas. Letak kembali periuk diatas dapur dengan api yang sederhana sambil itu masukkan susu, lada hitam, mentega. Lenyekkan bersama kentang tadi sehingga gebu dan sebati.

Bahan Sos:
200g tulang lembu
2 cawan air
1 labu bawang besar dipotong dadu
1 batang carrot dipotong kecil
1 batang celery dipotong kecil
sedikit tepung jagung
sedikit serbuk lada hitam

Tulang lembu dipanggang didalam oven sehingga perang kemudian direbus bersama carrot, bawang besar, celery dan lada hitam sehingga mendidh dan air menjadi berkurangan.
Tapis stok tersebut, kemudian masukkan bancuhan tepung jagung dengan sedikit air dan kacau sebati. Didihkan selama 10 minit. Setelah agak pekat boleh lah dihidangkan bersama mashed potato.

CRISPY FRIED CHICKEN

(A)
I kg chicken cut into smaller parts
6 tablespoons fresh yogurt or buttermilk
2 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon cumin
1 teaspoon cayenne pepper

(B)
2 cups self-raising flour
1 teaspoon cayenne pepper (more if you want spicy)
1/2 teaspoon onion salt
salt and black pepper to taste

Oil for deep frying

Mix all ingredients (A) into a large bowl. Stir in chicken pieces.. coat well. Keep aside in a fridge for 1 hour or more. You may also marinate it overnight.

Mix all ingredients (B) together and mix well. Put the ingredients in a large plastic bag. Place marinated chicken pieces into the plastic bag and shake chicken thoroughly to coat with seasoning.
Meanwhile, heat 2 cups of oil in a large, heavy-bottom skillet. Oil is hot when flour starts to sizzle when dropped. Add chicken to hot oil and fry 10-15 minutes on each side until browned. Then turn over again and fry for the second time until golden brown.





Note : You may replace self-raising flour with plain flour and add 1 tsp of baking powder. Be careful to keep the oil hot enough to fry your chicken but not too high as to burn the chicken before it's cooked.

Quick n' Easy?

 
Quick n' easy.. and it's my daughter's favourite..





SPICED FISH with cucumber yogurt Sauce

Adapted from Women's Weekly

4 cuts fish fillets
2 tsp ground cumin
2 tsp ground corriander
2 tsp finely grated lemon rind
2 cloves garlic crushed
2 tsp olive oil

Cucumber yogurt sauce:
260g cucumbers seeded and chopped finely
1 1/2 cups fresh yogurt
1 1/2 tbsp lemon juice

Combine fish in large bowl with remaining ingredients. Cook fish in heated large oiled non-stick pan, in batches until browned both sides and cooked through. Serve fish with cucumber yogurt sauce and pieces of lime, if desired.

Cucumber Yogurt Sauce : Combine ingredients in a small bowl.







COLESLAW

shredded cabbages
shredded carrots
equal amount of mayonnaise & fresh cream
salt and pepper
lemon juice (optional)

Rinse all vegetables in cold water and drain well.
Whisk all ingredients and toss in the vegetables. Serve at room temperature or chilled.






POTATO CROQUETTES

4 large potatoes cooked in skins
30g butter
1 egg yolk
1 egg
1/4 tsp ground nutmeg
1/2 tsp tarragon
3 beaten eggs
125g breadcrumbs
salt and pepper
oil for frying

Peel and cube potatoes. Mash thoroughly or grate finely. Add butter to potatoes and season well. Mix to incorporate. Add egg yolk and 1 whole egg; mix well with wooden spoon. Add nutmeg and tarragon, mix again.
Spread potato mixture flat on a dinner plate. Cover with a cling film and chill for a few hours. Preheat oil. Shape potato mixture into croquettes (cylindrical-shaped rolls). Dip in beaten eggs to coat completely and roll in breadcrumbs. Deep-dry for 3-4 minutes.

Mamahouse ~ Mama guna sebarang white fish fillet pun sedap.. Tapi kalau mama buat untuk kids kat rumah tu, kurangkan lemon kat yogurt sauce tu.. jadi tak masam sangat.. Instead of yogurt, mama pun boleh ganti dengan fresh light cream..

Mas ~Alhamdulillah, kak rossya sihat sahja. You can get double cream dari Cold Storage. It's other name is actually heavy whipping cream.. bermakna double cream tu kalau diwhipped up will hold its shape better compared to using normal whipping cream. Tapi kadang2 double cream tu susah nak dapat.. sebab selalu jugak tak der stock. Brand-wise kak rossya tak particular.. sebab they ended up to be same anyway. For coleslaw .. try to use light cream.. kalau takder boleh guna pure cream atau fresh cream... kalau takder jugak terpaksalah guna double cream...Rasanya lebih kurang sama.. cuma double cream has higher butterfat content, making it 'richer' than light cream.. Heehee.. talk about nak jaga badan kan.. Tarragon is a kind of herbs.. Remember to use fresh herbs for basting or marinating grilled stuffs or patties. Use dried herbs for stews atau lauk2 yang berkuah pekat tu.. They actually produce a different outcome. Kak Rossya beli my fresh herbs ~ tarragon, thyme , oregano.. kat ColdStorage cold section.. bahagian sayuran segar dan salad segar tu. Last but not least.. at the moment.. I'm using Heinz Worchestershire sauce.. sebab it's the smallest bottle available.Worchestershire sauce is actually a marinating sauce that made up of anchovies(ikan bilis), molasses (air gula hangus) and soya sauce as their main ingredients. Semua supermaket ader jual.. bahagian seasoning. I hope this helps.. sorry.. did I get carried away here? Panjangnyer....kak rossya ngoceh ni...

I am dedicating the next few entries to the kids.. coz' they make me happy.. The children are having their year-end holidays..here and Malaysia too.





The basic chocolate truffle, for many chocolate lovers is one of life's simple pleasures. What most do not realize, though, is how easy they are to make. It is... just a little bit messy... Well.. what is mess.. so long your kids get to do it together and have an enjoyable time... So are you game enough?






BASIC CHOCOLATE TRUFFLES


220 milk chocolate chips
80ml whipping cream
80g UNSALTED butter (Don't use margarine)
and your favourite toppings... cocoa powder or confectioner's sugar


Melt milk chocolate chips over simmering water in a double boiler, stirring frequently with a rubber spatula. When chocolate is completely melted, add whipping cream and stir together with a whisk(hand whisk). Remove from heat, wipe water from the bottom of the pan, and stir in butter - one tablespoon at a time - until completely melted. Cover and place in the refrigerator for several hours or until firm. (approx. 2 hours) Place a layer of wax paper or foil on a tray. Shape the firm mixture into balls. Place balls onto the wax paper and return to refrigerator for about an hour or until firm again. Then roll truffles in cocoa powder or confectioner's sugar and store in an airtight container in the refrigerator. Truffles are best when served chilled.







You can make a variety of homemade truffles anyway you like it. Add any of the following for extra flavour :

1) peppermint essence for mint taste
2) coffee oil for mocha truffles
3) chopped unsalted nuts for a nutty truffle
4) whole nuts such as almond and hazelnut
5) raisins for ffuity taste
and etc...

For coating :
1) I would recommend chocolate mix or cocoa ready mix instead of cocoa powder.. coz they are a lot sweeter compared to cocoa powder which I find has a powdery bitter taste. If you using cocoa powder.. you can also mix it with a little bit of icing sugar.
2) icing sugar sifted
3) melted chocolate.. I find coated with milk chocolate is tastier compared to the bittersweet type. I personally find that coating your truffles with chocolate makes it easier to handle the truflle once refrigerated. Make sure to store your truffles in an AIRTIGHT container to prevent moisture build-up.
4) chopped unsalted roasted nuts.




Warning ~ Making truffles is indeed easy.. but I honestly find that it can be a bit messy. When you are shaping into a smooth ball.. your palm will be covered in chocolate . After a few truffles, if you sense that the truffles are melting too much as you roll, dip you hands into ice water, dry them well and then continue rolling. If you want to smooth the truffle even more, refrigerate them for 30min, and then roll them again a second time. Return the shaped truffles to the wax paper and refrigerate for 1 hr, or until ready to dip.

Note : Hey guys.. Don't be disheartened!! The other alternative to avoid such messiness in your kitchen while working with your kids... You can in fact shape the mixture by using two teaspoons and make simple rounds. You'll definitely have clean hands and giggling little kids..





For cut-out truffles... spread the chocolate mixture onto a tray covered with aluminium foil. Once refrigerated and firm, simply make cut-out shapes . Peeled off aluminium gently.. and coat accordingly.






Melt a little chocolate with a teaspoon of veg. shortening and dip your masrshmallows. Let dry. You can even sprinkle some chopped roasted nuts on the chocolate..

When my best friend gave up on me...

 
Huh Huhu... It was the busiest period of the season.. but my best friend finally gave up on me.. a few days before Eid.. Luckily.. all cookies were prepared.. before my faithful oven..aka..my best fren.. broke down.. And I didn't even realise that there was any problem at all. All that I notice was my layered cakes (2 pcs) were burnt at the bottom eventhough no 'bottom flames' were on. It was a total heartache to have wasted nearly 50pcs of eggs for nothing. Then.. switch to my mini conventional oven.. and smoke started coming out. Gosh.. what was that..???#@/! There was a burning smell as well.. (Dugaan.. dugaan..) And you wouldn't believe me... on the last night of Ramadhan.. my microwave oven..didn't get heat-up.. eventhough it was switch on... Nasib...... So.. my baking project has to stop temporarily.. or probably I still can use the oven.. only has to succumb to the irregular temperature.. What say you?

To Mama Siti.. who requested for Black pepper Beef recipe.. this is how I prepared mine.. Kindly adjust to suit your liking.. cos.. I don't really have a basic recipe.. (Ini kan kes campak2) I tried to recall the approximate measurement... But you should do it according to your taste yaa..







DAGING BLACK PEPPER

500g daging batang pinang (dihiris tipis)
1 sudu kecil bawang putih dicincang
1 sudu besar sweet sauce (boleh guna kicap manis saja)
1 sudu makan oyster sauce
1 sudu makan lada hitam ditumbuk kasar
1/4 cawan air
Minyak untuk menumis

Bahan B:
1 cawan capsicum (campur semua warna) dihiris
1 biji bawang bangla di potong enam
1 ikat daun bawang dipotong sepanjang 3 inci
2 biji tomato besar potong enam
3 inci halia di hiris halus seperti batang mancis

Panaskan sedikit minyak dikuali.. masukkan bawang putih, daging dan serbuk lada hitam. Tumis sehingga daging empuk.. Akhir sekali masukkan sos manis, sos tiram, dan kesemua bahan B. Setelah sebati.. masukkan sedikit air. Bubuh garam dan gula jika perlu..





Specially to Cik Bawang.. I did my Black Pepper Prawn.. just like the above recipe. Only I would substitute the cooking oil with butter.. Adjust anything to your liking.. my dear..


I was drooling when I saw kuih lopes at MamaFami's fotopage. So I decided to make my own lopes.. my USUAL way.. You see.. I know.. and I read in many blogs how.. people would prefer the improvised version as they are more simplified and "tak leceh'. But over here, we are so used to making our lopes this way.. that we don't really find anything 'leceh' about it. Sometimes, we would prepare around hundred to three hundreds pieces for special occasions like wedding and small gathering. I guess.. it's just fun.. when you fold the triangles.. just like folding your samosas..






How I make my Lopes:
I will soak my glutinous rice with a teaspoon of alkaline water and leave for about 2-3 hours. Then wash them well and drain them. Prepare the banana leaves.. tear them into 3inches strips. Before that, you may softened the banana leaves by dipping in hot water. Then fold the banana strips into a cone by the end. Fill with 2 dessertspoon of glutinous rice.. and fold compact like you are folding a samosa. Tie them up with raffias. Or you may also use rubber-bands. Boil in boiling water for 3-4 hours. Once cooked... drain and cool thoroughly. Discard the banana leaves and cover lopes with steamed coconut.. and have it with your palm-sugar syrup.. Yummy...
